Although he has always loved cooking, it was when Eric was 25 years old that he became really serious about pursuing a career as an executive chef, “It was around then that working with fresh produce and high quality products captured my attention. To have a great restaurant you definitely need great quality products!” Eric and his wife both enjoy cooking at home. His favorite meal is pasta, “ So simple and easy with the most essential items in the kitchen — fresh ingredients!”

Eric was fortunate to apprentice with two great chefs at the restaurant L’Express in Montreal — Joel Chapoulie, who encouraged him to use his senses (see, taste and feel when cooking); and Bruno Le Foll, who was also chef at Chez Delmo, and with whom he enjoyed many talks about the French-Michelin-star restaurants in France and fine dining. Montreal en Lumière even came to the restaurant to taste and experience cooking in a restaurant renowned around the world.

Having overseen many weddings at Manoir Rouville-Campbell, Eric is confident in saying: “All those special occasions at the club will be simply wonderful.”

Because being a Chef involves a lot of stress and is very demanding, Eric tries to always have fun in the kitchen, “On good days and not so good days you need to find a way to make your work easier and fun. Not every day is a perfect day in the kitchen but with the right attitude you can avoid disasters.”

Eric’s number one goal? “To make our members love dining at the Club!”
