Before opening his establishment, Fabrice Germain is sous chef at the Heath Lodge Hôtel in England and second at the Hôtel de Paris in Moulins. In 1989 he opens his restaurant, Le Terroir, in Santenay.
Since 1989, Fabrice Germain has been following the evolution of cuisine and new technologies, thanks to regular internships.
His restaurant has now prospered, with a revenue multiplied by 4, and has been mentioned in the Michelin guide, Routard guide, as well as the guide Champérard.
