After a few years of French gastronomy school (Alain Ducasse) where he learns the basics of cuisine, with Frederic Bacquié at la Balette (Collioure) and with Jean Coussau in Magescq, Guénaël Avy, curious by nature, decides to export his know-how to discover new horizons.
In Saint Barth for a clever blend of flavours at the Eden Rock Hotel, in Switzerland at the Montreux Palace for the opening of the restaurant Jaan, and finally in French Polynesia for the opening of the Manava Suite Resort.
After a return in France to complete his knowledge, with Max Timbert for the vegetable scupting, at the Lenôtre school and with Eric Guerin at the restaurant La Mare aux Oiseaux (St Joachim).
Today, world citizen, Guénaël Avy settles in China to transmit that passion and the epicurean philosophy that he wants to share.
