Jean-Yves Bournot was born in Paris on April 27th 1979, in a family originating from Brittany where the smells of the native country are never far. Young scout and fan of Judo, he wants to succeed and starts at 15 years old with a traditional training. Invested and successful, he has his diploma in 1998 in Pastry, chocolaterie and ice-cream making.

Keen on discovering new experiences, he goes to work with the bests of contemporary French cuisine. The stars are not only in his eyes and are born in his work, in prestigious establishments : With the Pourcel brothers, and then with Thierry Marx he develops his culinary knowledge and sens of aesthetics.

These last years, at the Meurice, he develops his cuisine with the friendship of Yannick Alléno. After being at the Cheval Blanc in Courchevel, he joins today the Grand hôtel du Palais Royal for a new challenge.
