His food is innovative and passionate, and demonstrates great respect for his local food producers. He is always dreaming of how to offer dishes with a twist, while maintaining his commitment to reconnecting diners with their food memories.

Michael has traveled extensively to work with some of the world’s best chefs – Rene Redzepi of Noma in Copenhagen and Grant Achatz of Alinea in Chicago. He also placed 4th out of 18 in the top rated TV show MasterChef Australia: The Professionals.

Incorporating contemporary techniques is evident in his new restaurant East. bar and dining (Mount Martha). Michael Demagistris continues to experiment and push the boundaries. Foraging the beachside, fields and roadsides of the Mornington Peninsula for forgotten produce has helped inspire his seasonal menu.

Michael always strives to be the best and has continued to challenge himself against the finest culinary talent in the country. One thing is for sure, amid the theatrical presentation, what arrives at the table is sophisticated yet playful, with a strong sense of place.
